Peach Muffins

These peach muffins are a hit with my two boys! If your children don’t like peaches, try another type of fruit… maybe strawberries, apple of mango. Yum!

Peach Muffins

Serves: 18 large muffins
Ingredients
  • 2 medium peaches, diced (or the equivelent in tinned peaches)
  • 2 cups self raising flour – wholemeal if you have it, white is fine too
  • 2 eggs
  • 1/3 cup desicated coconut
  • 250g light sour cream
  • 3/4 cup caster sugar
  • 1/2 cup vanilla yoghurt
  • 1/3 cup vegetable oil
Instructions
  1. Sift flour and combine with coconut, peaches and sugar.
  2. Add the eggs, sour cream, yoghurt and mix until combined (but don’t over stir)
  3. Spoon into greased muffin tin or tin lined with cupcake cases
  4. Bake for 30 mins at 180 degrees
  5. Freezeable after cooking
  6. Makes 18 large muffins or 24 small cupcake size muffins.
Notes
Another idea? Substitute the peaches for another fruit of your choice. Maybe strawberries, apple or mango. For an extra flavour hit use flavoured yoghurt instead of plain.
