As busy mums we are always searching for ways to make those household chores take a little less time, take up a little less energy, take a little less fuss…

The microwave has done a lot to help families in the kitchen over the years. If you’re anything like me, you’ve heated the baby’s milk, steamed vegies and rice, defrosted meat and reheated countless meals. But that’s kind of where my usage of the microwave ended much of the time. I never was excited enough to try any micowave recipes – the thought of steamed cakes and microwaved meats simply didn’t tickle my fancy. The microwave is a wonderful invention but, for me, it has always just been a way to get things done quickly and conveniently in place of slaving over a stovetop or letting the snags defrost on the kitchen bench.

Breville has just launched its new Quick Touch Crisp. It’s not only a microwave, but it has an element and so grills, too! And this means no more soggy food! Instead, you can indulge in flaky pastries, grilled meats, crispy reheated pizza and roast vegies, all while still using the microwave how you always have…

I now have the sleek stainless-steel machine standing proudly on my kitchen benchtop … and I’m not afraid to use it.

10-minute mini savoury scrolls (makes 24)

Quick, easy, yummy, healthy, and great for little ones to hold in their small hands, these savoury scrolls are certain to become a staple in your household. They’re also terrific for after-school snacks (without destroying an appetite for dinner) and are simple and delicious to make for your Mother’s Group get-togethers. And, to top it off, they take fewer than 10 minutes to cook!

You’ll need…

1 sheet puff pastry
1 egg
1 Tbsp water
2 Tbsp bought or fresh pesto
1 spring onion, chopped
2 rashers shortcut bacon, finely chopped
1/2 cup low-fat grated cheddar
1/4 cup grated Parmesan
Freshly cracked black pepper, to taste

Step 1: Select SMART COOK|GRILL on your Breville Quick Touch Crisp. Turn the TIME|FOOD TYPE dial until you reach PIES&PASTRIES then press START. Turn the dial to select FROZEN, then press YES to Preheat Pan. Place your Breville Crisper Pan (legs extended) inside the microwave and press START. Preheating will take 3 minutes.

Step 2: While the microwave is preheating, lay a thawed square of puff pastry on a lightly floured benchtop. Cut in half horizontally and separate the two halves slightly.

IMG_4383 (1)Step 3: Combine egg and water in a cup. Using a pastry brush, brush the egg wash over the puff pastry right to the edges. Spread pesto over the top, then sprinkle over the spring onion, chopped bacon, cheddar and Parmesan. Grind pepper over the top, to taste.

Step 4: Starting from the long sides, carefully roll up each length of puff pastry as tight as you can without spilling the filling or splitting the pastry. You will now have two logs. Carefully cut logs into slices about 1cm wide – 12 slices for each log.

IMG_4386Step 5: Using an oven mitt, remove the Crisper Pan from the microwave and place on your benchtop. Arrange half mini scrolls around the inside of the Pan (you will hear them sizzle!), then place the pan into the microwave. Turn the AMOUNT dial to increase grams to 200g, press START, then quickly turn the TIME dial two clicks to the left to decrease time to 7 minutes. Halfway through cooking, you will be asked to turn the Pan around for even cooking. Using an oven mitt, remove Pan from microwave. Place scrolls on a wire rack to cool slightly and repeat cooking for second batch. These scrolls are best eaten warm.

 

Try this!

Don’t be afraid to experiment with other flavour combinations, including the following.

  • Vegemite and cheese
  • Frozen spinach (squeeze all the water out before using), ham (finely chopped) and cheese
  • Capsicum and onion (both finely chopped), cayenne pepper or sumac, and Parmesan
  • Red onion, tuna, cracked black pepper and Philadelphia cream cheese
  • Strawberry jam and cheese spread (for a sweet treat!)
