The Sawmill in West Pymble is a welcoming local eatery offering rustic Italian food in a warm, buzzing environment.
The venue offers a café menu with a light Italian influence. Signature lunch items include the Sawmill burger with truffle chive chips, and lamb salad with pumpkin, quinoa, goats cheese, spinach and walnuts.
At night the offering turns to mouthwatering regional Italian dishes, overseen by head chef Ruben Castellaz, previously of Fratelli Fresh. Dishes include antipasto, handmade pastas including gnocchi with smoked Scarmoza cheese, hazelnuts, butter & sage, hearty mains such as slow cooked lamb shank served with polenta and porcini mushrooms, and woodfired pizza. Bright, simple flavours are the highlight and dishes are thoughtfully prepared using fresh, seasonal ingredients.
Beverage offerings include house-roasted coffee, called the Italian Street Collection, tea by Rabbit Hole, a curated selection of wine, signature cocktails and beer on tap.
Paying homage to the area’s historic role in timber production, The Sawmill is furnished with natural and recycled timbers throughout. The wooden fittings are complemented by exposed brick, pendant lights and vintage sawmill relics, which create a cosy, laid-back ambience.
The venue is also a flexible, multi-purpose space perfect for events large and small, and the team offers custom catering. Open from 11:30am until late, 6 days (closed Tuesday), The Sawmill has something for everyone.
